i love making my own granola for two reasons. a) it’s healthier and b) it’s so much more affordable! if anyone knows why the heck granola is so expensive, please let me know, would you? i always have a jar on the go and pairing it with plain yogurt is a really great quick and filling breakfast or snack. pick up your dry components in the bulk section (organic if you can!) and switch up the oil if you like. if you’ve never tried pumpkin seeds before, they have a nutty flavour and are a healthy protein source. this recipe takes literally 5 minutes to throw together – enjoy!
COCONUT PUMPKIN SEED GRANOLA
4 cups rolled oats (not quick cook)
1 cup each pumpkin seeds and unsweetened ribbon coconut
1/3 each olive or coconut oil and maple syrup
1 tsp vanilla
pinch sea salt
method:
- pre-heat oven to 325F
- throw everything into a bowl and mix well
- line baking sheet with parchment paper
- tumble mixture on to baking sheet – you may need to do two batches
- bake for 20 minutes or until golden (watch it closely, it will burn quickly)
- keeps in an air tight jar for up to two weeks (if you still have some left after two weeks, i have failed you)
