a few weeks ago, we hosted an intimate dinner party. i am a huge fan of entertaining, and often, end up going all out. this time, we had a more laid back attitude, deciding to make an appy (smoked salmon terrine – i’ll share the recipe in a future post), dessert and ordered indian take out for dinner! it allowed me to enjoy the time with friends instead of worrying about fussing with a complicated meal. of course, the beer and wine flowed aplenty.
i thought these tangy and sweet bites of chocolate dipped fruit were the perfect finish to a heavy meal and even though they are simple to prepare, they look quite impressive.
i used a bamboo skewer to poke the blueberry and dip it into melted chocolate (tip: melt a good quality chocolate, not chips, over a double boiler)
to grab the raspberries, i used chopsticks (finally a use for the endless stream of random chopsticks!)
lay the dipped fruit on a parchment paper lined cookie sheet, and pop in to the fridge – they will firm up in about 30 minutes
i piled up the fruit on a white platter to serve informally on the coffee table – they were gone in minutes!
