recipe: coconut cream tarts

every sunday, i make a dessert for family dinner at my in-laws. a few weeks ago, i whipped up some coconut cream tarts. my boyfriend is a ridiculously devoted fan of anything coconut and exclaimed that he’d prefer these to a birthday cake every year. i guess they were a hit!

this is the recipe i used. full disclosure: i saved myself an hour and bought frozen tart shells, but made sure to take them out of the aluminum tin before serving – keep ‘em guessing! find a great pie dough recipe here.

a few tips:

  • adding the toasted coconut ribbon to the top on each tart really gives it that ‘haute dessert’ look, so don’t skip it
  • when cooking the custard, take it off the heat when it starts to thicken. i cooked mine a little too long, and it was really difficult to strain
  • try not to eat the custard by the spoonful as you’re assembling… it’s totally to die for
